Fragrant apple cakes prepared “by the cup” are a quick and popular egg-free dessert. Thanks to the simple dough, airy apple filling and crunchy crumble, you can make them anytime – for breakfast, with coffee, or as a sweet finale to a festive table.

Preparation procedure

  • Preparing the apple filling In a small pot mix the chopped apples, sugar, lemon juice with zest, cinnamon and water. Occasionally stirring, simmer over low heat until the apples soften (about 10 minutes). Mash with a masher or fork to a compact but still chunky consistency. Let cool completely.
  • Preparing the yeast starter and dough In a larger bowl mix the lukewarm milk with the dry yeast and a tablespoon of sugar. Let rest for 10 minutes until a foamy starter forms. Add both types of flour, the remaining sugar, the melted fat and a pinch of salt. Work into a smooth dough (by hand or with a stand mixer) and let it rise in a warm place for 60 minutes, until it doubles in volume.
  • Shaping the pastries Turn the risen dough onto a lightly floured surface and divide into 15 equal pieces (each about 50 g). Form a ball from each and slightly flatten it into a patty about 8 cm in diameter.
  • Filling and final proofing Place a tablespoon of the cooled apple filling in the center of each patty. Fold the edges of the patty slightly over the filling, but leave it partly exposed. Transfer the prepared pastries to a baking sheet lined with parchment paper, cover with a towel and let them proof for another 15–20 minutes.
  • Crumble and brushing Meanwhile, in a small bowl quickly mix the flour with the sugar and pieces of cold butter to form crumbs. Before placing in the oven, lightly brush the pastries with milk and sprinkle with the crumble.
  • Baking Preheat the oven to 180 °C (fan 160 °C). Bake for 25 minutes until golden brown. After baking let the pastries cool briefly on the sheet.
