This original recipe combines everything we love about stuffing: juicy bacon, fragrant spinach and cheese, but serves it in a practical, stylish package. Preparation procedure

  • Prepare the filling for the batter Cut the bacon into small cubes and fry it in a pan until golden. Add the baby spinach and sauté briefly until wilted. Remove the mixture from the heat and let it cool slightly.
  • Mix the batter In a bowl, mix the flour, baking powder and salt. In another container whisk the eggs with the melted butter and buttermilk. Combine both mixtures, add the spinach mixture and half of the cheddar. Mix everything well.
  • Baking the muffins Prepare a muffin tin and line it with paper liners. Divide the batter into 12 cavities and sprinkle with the remaining grated cheese. Bake in an oven preheated to 180 °C for approximately 40 minutes. Then let cool on a wire rack.
  • Cream and decoration Mix the fresh cheese with salt, chives and chopped arugula. Transfer the cream to a piping bag and pipe onto the cooled muffins. Place a quarter of a hard-boiled egg on top and garnish with an arugula leaf.
