The Easter mazanec is a symbol of spring, new life and family togetherness. This traditional Czech loaf has been baked for centuries and must not be missing from any Easter table. Thanks to the combination of raisins, lemon zest and almonds it has an unmistakable taste and aroma that both young and old will love. Whether you serve it with butter for breakfast or as a sweet finish after lunch, one piece definitely won’t be enough.

Preparation procedure

  • First prepare the starter. Pour lukewarm milk into a bowl, add crumbled yeast, a tablespoon of sugar and a little flour. Stir and let it rise for about 10–15 minutes.
  • Meanwhile soak the raisins in rum. In a larger bowl mix the remaining sugar, flour, lemon zest, vanilla sugar, a pinch of salt and 1 egg. Pour in the risen starter and the melted (not hot) butter.
  • Work the dough until smooth. Knead it for at least 10 minutes – ideally by hand or with a mixer. Finally fold in the drained raisins and chopped almonds.
  • Let the dough rise. Cover with a towel and place in a warm spot for about 1.5 hours, until it doubles in size.
  • Shape the loaf. On a floured surface shape the mazanec, transfer to a baking sheet lined with baking paper and let rise another 30 minutes.
  • Preheat the oven to 170 °C. Brush the mazanec with the beaten egg, score a cross and optionally sprinkle with almonds.
  • Bake for approximately 40–45 minutes. If it starts to brown quickly, cover it with foil.
