This year, instead of the classic mazanec or jidáše, try creating sweet Easter bunnies that will decorate your festive table and delight not only children but also Easter carolers. Thanks to the combination of spelt, semi-coarse and all-purpose flour, the bunnies are beautifully fluffy and fragrant.

Preparation procedure

  • Preparing the starter: Crumble the yeast into a small bowl, add a teaspoon of sugar and a little warm milk. Sprinkle in a bit of flour, mix and let it rise for 15–20 minutes in a warm place.
  • Dough preparation: Heat the remaining milk, add the chopped butter and let it melt. In a bowl, mix the flour with the powdered and vanilla sugar. Add the starter, whisk the yolks into the buttery milk and combine everything into a soft dough.
  • Proofing: Cover the dough with a cloth and let it rise for about 45–60 minutes, until it doubles in volume.
  • Shaping the bunnies: Divide the dough into 12 pieces. From each, separate a small piece (for the tail) and roll the larger portion into a roll about 30 cm long. Shape it into a "U", place a knot in the bend as the tail and cross the free ends — ears will form.
  • Baking: Place the bunnies on a baking tray lined with parchment paper, brush with beaten egg and bake at 180 °C for about 25 minutes until golden.
