Preparation procedure
- Dough preparation: Pour water into a pot with a thick bottom, add sugar, salt and bring to a boil. As soon as the water starts boiling, slowly stir in the all-purpose flour and cook into a thick paste. Stir until the dough starts to pull away from the sides of the pot. Let cool.
- Adding the eggs: Beat the eggs and gradually pour them into the cooled paste, continuing to beat with a mixer until a uniform mass forms.
- Shaping the cream puffs: Transfer the dough into a pastry bag and pipe small pieces of dough onto a baking sheet lined with parchment paper. Leave sufficient space between them so they don't stick together while baking.
- Baking: Bake in a preheated oven at 200°C for about 20 minutes. Then lower the temperature to 180°C and bake for another 15–20 minutes. Do not open the oven during baking so the cream puffs do not lose their shape.
- Cream preparation: Bring the milk and sugar to a boil, add the vanilla sugar. In a bowl, mix the egg yolks with the Gustín and a little cold milk. As soon as the milk starts to boil, pour in the egg mixture and stir until the mixture thickens. Let cool. Then add softened margarine and beat until smooth.
- Whipped cream preparation: Whip the cream to stiff peaks.
- Assembling the cream puffs: Carefully cut the cooled cream puffs in half. Fill the bottom part with the prepared cream and whipped cream, then cover with the other half.
- Final touch: Sprinkle the cream puffs with powdered sugar and let them rest for a while.
