Preparation procedure

  • Soup preparation: Finely chop the onion, garlic, carrot and celery. Pour a little olive oil into a pot, add the chopped vegetables and sauté for 3–5 minutes, until they soften.
  • Add the lentils, turmeric and Italian herbs. Pour in the water, cover and cook for 15–20 minutes, until the lentils are soft.
  • Preparation of the bread: Cut the bread slices into cubes, drizzle with olive oil, sprinkle with dried garlic and herbs. Bake in an oven preheated to 180 °C for about 10 minutes, until golden and crispy.
  • Finishing the soup: Add the spinach, salt, black pepper and chopped parsley or cilantro to the soup. Cover and cook for another 5 minutes. Finally add the lemon juice and chopped tofu, mix everything well.
  • Serving: Serve the soup with the crunchy bread.
