Preparation procedure
- We wash the zucchini and peel it thoroughly
- If it has any seeds, we carefully remove them
- We cut the zucchini into small rounds, similar to when we slice potatoes
- We pour oil into the pan and heat it to medium
- In the hot oil we fry the zucchini so that it is lightly golden, but we must not overdo it so the inside of the zucchini doesn't become mushy
- We wash the parsley and chop it finely
- We grate the garlic cloves
- We blend the walnuts, or crush them finely with a knife
- In a bowl we finally mix the parsley, garlic, walnuts, salt, pepper and a little olive oil
- Then we add the mixture to the zucchini, mix thoroughly and serve
