I will tell you, I tried an enormous number of recipes for Linzer pastry and I come back to this one every time. The koláčky are more delicate than the classic Linzer – the trick is that, besides flour, potato starch, pudding powder and sour cream are also added to the dough. Try this improvement, it’s really worth it.

Preparation procedure
- Mix the dry ingredients.
- Add the egg yolk, butter and sour cream.
- Knead by hand into a uniform dough, wrap it in cling film and leave it in the refrigerator for 24 hours.
- Then roll out the dough and cut out shapes on a lightly floured surface.
- Keep an eye on the baking time, because every oven bakes differently. It's important that the surface remains pale.
- Assemble and coat in chocolate, nuts, coconut, or simply dust with powdered sugar.
- If you want the nuts to stick to the pastry, brush the surface with compote juice and coat. I coated the other side in chocolate.
