Cucumber salad in jars without cooking the brine, a recipe that will keep for a whole year

- You can prepare the cucumber salad from three, but also from thirty cucumbers – it's up to you. I make it from about 5 kg of cucumbers.
- Wash the cucumbers, cut off the ends and you can peel them, or leave the peel – as you normally do for salad – I always peel them.
- Grate the cucumbers on a coarse grater (into rounds or like potatoes – into smaller pieces).
- Layer the cucumbers into the jars so they are about 0,5-1 cm below the rim of the jar.
- Into a 700 ml jar add 2 teaspoons of sugar, 1 tablespoon of vinegar, 1 teaspoon of salt – I also add a pinch of ground black pepper, and optionally dill.
- Then fill up with cold water and close the jar tightly.
- Sterilize at 80 degrees for about 20-30 minutes.
- Turn them upside down, let cool and store in the pantry – that is, a cool dark place.
