  • Preparing the mixture: Coarsely grate the carrot and put it into a bowl. Add the egg and the pressed clove of garlic. Season with salt and pepper and sprinkle in the grated mozzarella cheese. Finally add the chopped parsley and mix everything thoroughly to form a compact mixture.
  • Shaping the patties: Divide the mixture into four equal parts. On a baking sheet lined with parchment paper, shape thin pancakes. Sprinkle the top of each pancake with seasoning to taste (e.g., ground paprika or herbs).
  • Baking: Preheat the oven to 200 °C. Bake the pancakes for about 7 minutes, until they are nicely golden and crispy.
