  • Mix the yolks with the powdered sugar and let the frothy mixture cook over steam until it thickens. It takes about 15-20 minutes.
  • Let the mixture cool and stir in the mascarpone.
  • Whip the cream and add it to the mixture as well.
  • Mix everything thoroughly with a mixer.
  • If you need a double amount, make the cream in batches. In large quantities the cream will not set properly.
  • Brew the coffee and add rum to it.
  • Let the ladyfingers soak in the coffee with rum.
  • Arrange the soaked ladyfingers on a baking tray.
  • Spread with the cream-and-mascarpone mixture.
  • Then arrange more ladyfingers on the layer of filling.
  • Spread the filling again.
  • For decoration you can dust with cocoa.
