Traditional Czech koláčky filled with cottage cheese, poppy seeds, plum jam or marmalade are a staple of home baking. This tried-and-true recipe guarantees not only great taste but also long-lasting moistness – the koláčky stay soft even for a whole week. They are perfect as treats for celebrations, wedding favors or a sweet finish to an afternoon coffee.

    Preparation procedure

    • Preparing the yeast starter Crumble the yeast into part of the lukewarm milk, add a tablespoon of sugar and a little flour. Mix and let it rise for 10–15 minutes in a warm place.
    • Making the dough Sieve the flour into a bowl, add the remaining sugar, a pinch of salt, the vanilla sugar, lemon zest, egg yolks and the risen starter. Pour in the melted butter and the rest of the milk. Work into a smooth, soft dough that does not stick. Cover and let rise for about an hour, until doubled in size.
    • Shaping the koláčky Take small pieces (walnut-sized) from the risen dough, roll them into balls and place them on a baking sheet lined with parchment paper. Let them rise another 15 minutes. Then make an indentation using a glass or your finger.
    • Filling and decorating Put a teaspoon of the chosen filling into each indentation and sprinkle with the crumb topping. Brush the koláčky with beaten egg.
    • Baking Bake in a preheated oven at 180 °C for approximately 15–20 minutes, until the koláčky are golden.
    • Finish Immediately after baking, brush them with melted butter mixed with rum – this gives the koláčky a more delicate flavor and keeps them moist longer.
