Coffee buttercream is a little treasure for Christmas cookies and desserts – a thin layer is enough and the flavor does all the work.   • Pour hot water over the instant coffee and stir thoroughly until it is completely dissolved. Let it cool completely. This step is essential to prevent the buttercream from separating.
  • Cut the softened butter into smaller pieces and place in a bowl. Add the powdered sugar and beat for 5–7 minutes, until the mixture is light, smooth and fluffy. For an airier texture, beat at a lower speed for a longer time.
  • Add the cooled coffee teaspoon by teaspoon, beating briefly after each addition. Never add all the coffee at once, otherwise the buttercream may split.
  • Place the finished cream in the refrigerator for 10–15 minutes to firm up slightly. Then it is ready for filling cookies or for use in desserts.
