Preparation procedure

  • Sift the plain flour into a bowl, add the sugar, vanilla sugar, baking powder and a pinch of salt. Add the cold butter cut into cubes and work it into the dry mixture with your fingers. Add the egg and quickly work into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  • Wash the blueberries and dry them well. If you are using frozen ones, let them partially thaw and lightly coat them in a tablespoon of flour so they don't release too much juice.
  • Preheat the oven to 180 °C. Roll out the dough on baking paper and transfer it to a tray lined with paper. Spread the dough evenly into the corners. Arrange the blueberries over the dough.
  • Make the streusel by working the plain flour, sugar and butter together with your fingers. Sprinkle it evenly over the blueberries.
  • Place the cake in the preheated oven and bake for approximately 30–40 minutes, until the surface is nicely golden and the streusel is crispy.
  • Let the finished cake cool. Before serving you can lightly dust it with powdered sugar.
