  • Preparation of the meringue: Whip the egg whites with the granulated sugar and lemon juice over a double boiler until stiff peaks form, until the meringue is well set. Once the meringue is firm, remove the bowl from the heat and gently fold in the powdered sugar.
  • Preparation of the sponge base: Arrange round ladyfingers on a baking sheet, or if you prefer, bake sponge cake batter and cut out circles. Using a piping bag or a spoon, form dollops or peaks of the prepared meringue onto the ladyfingers.
  • Drying: Place the baking sheet with the ladyfingers and meringue into an oven preheated to 120 °C and dry for approx. 3 minutes. It is not necessary for the meringue to dry completely; it's enough for it to firm up slightly. After drying, let the ladyfingers cool.
  • Preparation of the chocolate glaze: Melt the chocolate with a little butter or oil over low heat or in a double boiler. Stir until the chocolate is completely melted and smooth.
  • Finishing the cookies: Once the ladyfingers and meringue have cooled, pour the prepared chocolate glaze over them. If you like, you can gently fold grated nuts or grated chocolate into the egg whites before shaping.
