Preparation procedure

  • Sponge Whip the eggs with the sugar until a fluffy foam. Add the melted butter, then the flour mixed with cocoa and baking powder. Beat everything into a smooth batter. Pour into a cake pan (bottom lined with baking paper) and bake for 25 minutes at 180 °C.
  • Syrup Let the baked sponge cool slightly and brush with caramel sauce. Place it back into the cake pan.
  • Cream Whip the egg whites with powdered sugar into stiff peaks. Add the bloomed gelatin and briefly whip again. Pour three quarters of the cream over the sponge. Into the remaining quarter stir in a little cocoa and spread the mixture evenly on top. Using the back of a spoon, lightly swirl the layers to create a marbled effect. Smooth and refrigerate for 2 hours to set.
  • Glaze Heat the chocolate with the butter in a double boiler or microwave. Remove the cake from the pan, line the edges with baking paper and pour the chocolate glaze over it. Spread it evenly over the surface and let it chill for another 30 minutes.
