  • Wash the zucchini – you may or may not peel it – and cut into larger cubes (similar to when cutting potatoes).
  • Salt and let rest.
  • Then remove excess liquid and sauté in vegetable oil until tender.
  • Put the nuts into a plastic bag and crush them with a rolling pin.
  • Finely chop the garlic.
  • In a bowl, mix the parsley with the nuts, garlic, and olive oil.
  • Add the sautéed zucchini and mix everything well.
