Preparation procedure

  • Cocoa sponge: Whisk the eggs with the sugar until thick and pale foam. Add the sifted flour mixed with the cocoa and baking powder. Gently fold until a smooth batter forms. Pour onto a baking tray lined with parchment paper or greased and dusted with flour. Bake in a preheated oven at 180 °C for about 25 minutes. After baking, let it cool completely.
  • Mascarpone cream: Whip the cream with the powdered sugar until stiff. Add the mascarpone and beat together until smooth.
  • Assembling the dessert: Place the cooled sponge on a serving platter. Slice the bananas lengthwise and spread them evenly over the sponge. Layer the mascarpone cream and smooth well. Sprinkle the surface with grated chocolate and optionally decorate with banana slices. Let the cake chill in the refrigerator for at least 2 hours.
