This simple and tasty recipe for semolina dumplings is a great idea for a homemade meal that you can make from just a few basic ingredients that you surely have at home. The recipe is passed down in our family from generation to generation and I got it from my mother. You can prepare the dumplings as a side for soup, or serve them on their own with bacon, quark, poppy seeds or nuts according to your taste.

Preparation procedure

  • Preparation of the semolina porridge: Bring the milk to a boil and add a little salt. Add the butter to the boiling milk and, stirring constantly, gradually sprinkle in the semolina. Cook the mixture until it thickens to the consistency of a thick porridge. Let it cool, then stir in the eggs.
  • Forming the dumplings: Using a wet teaspoon, scoop small dumplings from the prepared mixture. Place them into boiling water and cook for about 5 minutes, until they float to the surface.
  • Preparing the topping: Heat the pork lard in a pan and fry the chopped onion and bacon in it until crispy. Mix this mixture with the cooked dumplings.

Optional: You can also serve the dumplings sweet, for example with quark, poppy seeds or nuts.
