If you love choux pastry desserts that taste like they’re from a professional patisserie, this homemade sheet-pan choux cake will win you over. For 12 portions

Ingredients

Choux pastry:

Cream:

Caramel glaze:

Preparation procedure

  • Pour water and oil into a pot and bring to a gentle boil. Add the flour with a pinch of salt and, stirring constantly, cook until the dough begins to pull away from the sides of the pot. Remove from heat, transfer to a bowl and let cool briefly. Gradually work the eggs into the lukewarm dough, one at a time.
  • Divide the dough into two equal parts. Spread each onto a baking sheet lined with baking paper. Bake in a preheated oven at 180 °C for about 20 minutes, until the layers are lightly golden. Allow to cool completely.
  • Cook a thick pudding from the milk and pudding powders. While still hot, combine it with the butter and let it cool. Then whisk in the cooked condensed milk (Salko), setting aside one tablespoon.
  • Whip the whipped cream powder with the milk into a firm cream and add the reserved tablespoon of Salko.
  • Spread the pudding cream on the bottom layer, top it with the whipped cream, and cover with the second layer.
  • Let the sugar caramelize in a pan until light brown. Pour in the milk and stir until dissolved. Add the powdered sugar and beat into a smooth glaze, which you immediately spread over the dessert.
