Preparation procedure

  • First prepare the starter. Mix the yeast, a little warm water, and sugar to make a starter and wait until it starts to grow and foam.
  • Combine all the ingredients and knead the dough thoroughly by hand until it is smooth and elastic. Let the dough rise for at least 3 hours. (If you have time, let it rise even longer; this will make the holes in the bread larger.)
  • After rising, shape the dough into loaves and place them on a baking sheet or into a dish lined with baking paper, or greased with lard or oil.
  • Preheat the oven to 250 °C.
  • Bake the risen loaf for the first 15 minutes at 250 °C, then reduce to 220 °C and bake for about another 35 minutes. Every oven bakes a little differently, but +/- 5 minutes should be fine.
  • After baking, brush the loaf while still hot with water so it has a beautifully soft crust.
  • Let it cool and then store it wrapped in a cloth towel so it stays as fresh as possible.
