Eclair cookies is a simple chilled no-bake dessert that you can easily make and that will certainly delight any visitor. You can make it in two variants – either as a simple chilled treat without chocolate, or decorated with a chocolate glaze. In both cases the dessert is light, pleasant and refreshing. Let’s take a look at how it is prepared.
What you’ll need for the dessert
For the chilled Eclair cookies dessert you will need:
- 200 g whipping cream
- 2 sachets of vanilla pudding powder
- 3 ½ cups of milk
- butter cookies (wholegrain or regular)
For the glaze prepare:
- 3 tablespoons butter
- 1 ½ cup powdered sugar
- 3 tablespoons cocoa
- a pinch of salt
Preparing the dessert
The actual making of the dessert then consists of two basic steps – preparing the cream and preparing the glaze. Proceed as follows:
- Whip the cream and let it cool.
- Mix the pudding powder well with the milk so that the mixture is homogeneous.
- Carefully fold the whipped cream into the mixture.
- Put the resulting cream into the refrigerator and prepare your dish and the cookies.
- Cover the bottom of the dish with the first layer of cookies.
- Spread half of the cream onto the cookies and cover it with the second layer of cookies.
- Spread the second half of the cream over the cookies and finish the surface again with the third layer of cookies.
- Put the dessert in the refrigerator to chill – prepared this way it is practically ready, but you can improve it with a chocolate glaze.
- The glaze is prepared from melted butter.
- Add powdered sugar and cocoa to the butter and mix well.
- Apply the glaze to the slightly cooled dessert and spread it over the entire surface of the top layer of cookies.
- Then chill again – the dessert should be in the refrigerator for at least six hours.
After chilling, portion the dessert in the usual way and serve on a small plate with dessert cutlery. Its pleasantly sweet and light flavor will surely delight you and you will prepare it both for everyday and special occasions.
