Cheeses are a popular delicacy for many of us. Whether we mean hard, processed, blue, sheep or goat cheeses, we always enjoy them. If you are also a cheese lover, you may have already thought that it would be great if we could make cheese ourselves at home. That is why today we bring you a recipe specifically for the homemade production of one type of cheese. You need not worry about anything — if you follow our advice, you will be pleasantly surprised by the result.

Ingredients for making homemade cheese

To make fresh homemade cheese you will need one liter of fresh milk, one pot of plain yogurt and freshly squeezed lemon juice, approximately from half a lemon. In case you like spiced cheeses, you can add fresh herbs to the above basic ingredients, such as basil, oregano or thyme. Other options include versions with mixed peppercorns, sun-dried tomatoes, caraway and chili, or nuts.

Step-by-step instructions

The first step is to gently heat the fresh milk. Next, add the yogurt and the freshly squeezed lemon juice to the milk and stir everything well. Then let the mixture stand for approximately three hours. Prepare a clean cotton cloth and a sieve. Pour the mixture into the sieve lined with the cotton cloth and let it rest again, this time for about thirty minutes, so that the cheese separates from the whey. The whey will drip through the cloth into the container beneath the sieve and only the cheese will remain in the sieve. Then salt the cheese and place it into a plastic container. Close it tightly and put the cheese in the refrigerator to rest for eight hours. After this time has passed the cheese is ready, ready to be tasted. Due to its soft consistency the cheese is ideal especially for spreading on bread or other baked goods; you can enjoy it for breakfast, a snack or dinner. Compared to other versions of recipes for making homemade cheese, this one has the advantage that it does not require rennet.
