If you’re tired of the classic chicken schnitzel, we have a recipe for an interesting variation. This recipe resembles a Dutch schnitzel, but thanks to the added ingredients you can adapt it to your taste. The resulting dish is juicy, fragrant, and definitely worth trying.

What you’ll need:

  • Chicken breasts
  • 150 g of hard cheese
  • 1 egg
  • 3 tablespoons of flour
  • Salt and pepper to taste

Preparation:

  1. Preparation of ingredients: If you took the chicken breasts out of the freezer, let them thaw. Chilled breasts can be left in the fridge and taken out just before preparation. Grate the cheese on a coarse grater, which will add juiciness to the meat.

  2. Mixing the ingredients: Cut the chicken breasts into small pieces and mix them with the grated cheese. Add the egg, flour, salt, and pepper to the mixture to taste. Thoroughly mix the mixture so that all ingredients are well combined.

  3. Frying: Shape the schnitzels from the prepared mixture and place them in a pan with heated olive oil. Fry for 3–5 minutes on each side until golden and crispy.

  4. Serving: Serve the schnitzel prepared this way while still hot with your favorite side dish, such as roasted potatoes, smashed potatoes, or mashed potatoes. The schnitzel tastes best when served immediately after frying.

You can prepare chicken schnitzels not only from breasts but also from thighs. An interesting variant is using a yogurt marinade, which gives the meat tenderness and a rich flavor. This recipe requires a bit more time for marinating, but the result is definitely worth it.

Ingredients for the yogurt marinade:

  • Plain yogurt
  • Mustard
  • Garlic
  • Eggs
  • Juice of half a lemon
  • Chili seasoning
  • Pepper and salt

Method:

  1. Marinade preparation: Combine all the listed ingredients in a bowl and stir thoroughly.

  2. Meat preparation: Wash, dry, and pound the chicken thigh schnitzels. Then place them into the prepared marinade and let them marinate for at least two hours, ideally overnight.

  3. Baking: Coat the marinated meat in breadcrumbs mixed with grated cheese and place in a preheated oven. Bake at 180°C for 45 minutes. Halfway through baking, flip the schnitzels so they brown evenly on both sides.

Serving:

As a side dish you can again serve potatoes in various preparations, or try a vegetable salad.
