Recipe for a mole cake-like dessert, but a quicker version
This recipe is a variation of a mole cake, but with the difference that it will not be as caloric, and moreover it will be quicker to prepare. Enjoy this cake with your nearest and dearest. You will need:
- Salt a pinch
- Egg 1 pc
- Butter 200 g
- Cocoa 30 g
- Baking powder without phosphates 2 teaspoons
- Sugar 100 g
- All-purpose flour 300 g
For the filling you will need the following ingredients:
- Vanilla sugar or vanilla extract 1 teaspoon
- Eggs 4 pcs
- Salt a pinch
- Cornstarch 2 tablespoons
- All-purpose flour 2 tablespoons
- Sour cream 220 g or Greek yogurt
- Sugar 150 g
- Quark 680 g
First preheat the oven to 180°C. Now take a cake pan and line it with baking paper. From personal experience we recommend greasing and flouring the pan. This will ensure the cake has a nice shape. The pan should have removable sides so that the cake retains its shape after baking. The pan should have a diameter of 26 centimeters.
Put all the ingredients for the dough into a food processor and mix into a dough. Such dough will be denser and will tend to crumble – that is fine. Now remove the dough and take two thirds and press it onto the bottom of the cake pan, don’t forget the sides, put dough there as well. The layer must be even.
Put all the ingredients into a mixer or food processor and mix the ingredients for the filling. Mix until the mixture is free of a single lump.
Put the prepared filling onto the prepared dough in the cake pan. Now take the remaining dough and crumble it or grate it over the filling. The dough should be across the whole pan.
Now transfer the cake to the oven and bake at 180°C for approximately 50-60 minutes. After a few minutes check the cake, if ,,rises” even above the top of the pan, cover it with foil. After baking let the cake cool for ten minutes directly in the pan, then remove it to a rack. It is best chilled. Enjoy your meal!
