If every year you prepare your own strawberry compote, try following this ancient recipe this time. It is purely natural, without unnecessary preservatives and if you don’t eat it by then, it will last you through the winter.
Strawberry compote
We need:
Quantity for 2 jars with 300 ml of strawberry compote. From 1 kg of strawberries you get 7 jars and you need syrup prepared from 210 – 280 g of sugar and 1.4 l of water.
- 300 g strawberries
- 400 ml water
- 60 – 80 g sugar
- 20 ml lemon juice
Procedure:
Wash and clean the strawberries, let the water drain off.
Wash and sterilize the jars.
Pour water into a pot and add the sugar. Boil for about 3 – 4 minutes after it comes to a boil so that a syrup forms.
Let the syrup cool slightly so that it is warm but not hot. Then pour it over the strawberries in the jars.
Place a kitchen towel into a wide pot. Tighten the lids on the jars, turn them upside down to check they don’t leak and place the jars into the pot. Fill it with water up to 2/3 of the jar height and put it on the stove. Cover the jars with another (wet) towel. Bring the water to a boil and let it boil for 10 – 12 minutes.
Turn off the stove and leave the jars to cool down slowly.
After cooling you can store the jars in the pantry. The compote will last you the whole winter.
