Summer spreads are hearty, tasty and affordable. Moreover, you can make them from homegrown ingredients that you can grow yourself in the garden. The main ingredient can be zucchini, which applies to the recipe we present. A quick snack for the whole family can thus be ready in no time.

You can experiment with spices, the spread will taste different every time

For a summer spread full of zucchini you will need 2 zucchinis, a carrot, an onion, a bunch of greens and two tubs of quark. For seasoning you can use salt, pepper and also prepare sunflower oil for frying. Chop the onion and the zucchini into small pieces, grate the carrot finely. Put the onion to sauté in heated oil and fry until translucent. Then add the carrot and mix well.

You can add salt, oil or pepper, all to taste. Finally simmer until the vegetables are soft. Add the zucchini only at the end and stir again. Simmer together in the pan for another 2–3 minutes, then cover it with a lid and leave it for about 10–12 minutes. Remember to stir the mixture occasionally. Finally add more salt and pepper if needed and fry for a few minutes without the lid.

You must let the vegetables cool and then pop them into the blender

As much water as possible should evaporate from the vegetables. Then remove them from the heat, let them stand for an hour to cool and then chop them finely. Likewise, cut the cheese into small cubes. In a blender, puree the cooled vegetables; you can drain the juice from them beforehand if it hasn’t cooked off. Finally add the quark, herbs and blend until smooth. It should take about 3–4 minutes.

And now all that’s left is to taste and adjust the seasoning if necessary. You can serve the spread on a fresh baguette, which you can lightly fry in oil, or on ordinary bread. It’s also suitable for canapés; you can garnish it with pieces of sausage or cheese. You can also make other spreads that are suitable for summer grilling as “nibbles” while waiting for the main dish from the grill.
