Do you love fries but don’t know how to make homemade ones so crispy, as if you’d just bought them ready-made somewhere? Fries are not exactly a diet food, but if you don’t overdo it with them, nothing bad will happen and you can enjoy them. Light, crispy and homemade, they will be the best snack for your family.
Why do homemade fries differ from store-bought ones?
For great fries you need good potatoes, oil, water and sugar. Yes, the last ingredient is sugar. First peel the potatoes, cut them into sticks and put them in a bowl of cold water for 10 minutes. Bring water to a boil in a pot and drop the fries into the boiling water. Sweeten the water with a tablespoon of sugar. Boil them 3-5 minutes and then drain them so they remain dry. Heat the oil to 160 degrees and add the fries, frying them until they float to the surface.
Place the fries on parchment paper and leave them there until the oil drains from them. Fry the fries briefly during the second frying, just so they gain a golden color. The second method is equally effective; instead of sugar you will need a little vinegar. It’s a small detail that can help make the fries amazingly crispy, as if you had bought them at a stand.
For the second method you only need potatoes, water and vinegar
The secret of the second method lies precisely in the use of vinegar. For that you only need good potatoes and water. The first step is the same – you must peel the potatoes and cut them into sticks that you will fry. Put them all into a bowl of cold water and wait a few minutes. Then rinse them under fresh cold water, let the starch drain off and then bring the water in the pot to a boil and add salt and vinegar. Cook the fries 3-5 minutes, depending on how large they are.
Then drain the water, dry the fries on a paper towel or kitchen cloth and fry them in oil heated to 190 degrees. Fry them until they are golden – they will be wonderfully crispy and at the same time juicy. Next time you’ll have less work making the fries, you’ll save a lot of time, and you can also prepare the fries in advance and freeze them.
