Whether you’re preparing lunch for your loved ones or for a group of friends or family, a stuffed beef roulade will certainly never disappoint. It is tasty, uncomplicated, fairly quick and tastes perfect. If you season it correctly, even the most demanding eater will smack their lips. Choose good-quality beef, preferably with only about ten percent fat. If you choose ground beef with twenty percent fat, the roulade will dry out a lot.
Prepare these ingredients
- Potatoes 1 kilogram
- Bell pepper 1 piece
- Onion 1 piece
- Tomatoes 300 grams
- Other vegetables to taste
- Vegetable oil 1 tablespoon
- Egg 1 piece
- Salt
- Pepper
- Ground paprika
- Mustard 2 teaspoons
- Parsley 2 stalks
- Bacon 200 grams
- Pickled cucumber 2 pieces
Preparation
Peel the onion and slice it. Cut the pickles lengthwise. Chop the parsley into very fine pieces. Set these prepared ingredients aside and get the meat ready.
Preparing the meat
Unwrap the minced meat and put it into a food processor. The finer the meat is, the easier it will be to work with. While processing, add two teaspoons of mustard, the parsley, salt and pepper, and mix for at least one minute. Next, prepare baking paper, spread it on the table and place the meat on it. Using your fingers or the palm of your hand, “roll” the meat into a patty in the shape of a rectangle. Spread mustard over the formed patty, then layer the bacon, the sliced onion or thin rings, place the pickle at the edge and, using the baking paper, form the roll. Set the meat aside to rest and prepare the potatoes.
Preparing the vegetables and potatoes
Wash, peel and cut the potatoes either into slices or into wedges. In a small bowl, mix the vegetable oil (we recommend using extra virgin olive oil, not refined) and add paprika, salt and pepper. We recommend adding crushed garlic or other spices you like, for example basil or oregano. Now prepare the bell pepper by cutting it into quarters and wash the tomatoes, scoring the top in a cross. Drizzle the vegetables and potatoes with the seasoned oil and place them on a baking tray lined with baking paper. Add the roulade to the vegetables and potatoes, preheat the oven to 180 degrees and bake for approximately one hour. Check the food regularly.
