Stuffed roulades and rolls are among the most popular dishes around the world, because they offer an endless number of variations. You can use chicken, pork or beef, the filling can be purely vegetable or you can combine favorite fried eggs with a sausage, someone will choose only cheese for its taste and texture. Among the best-known rolls is the Spanish “ptáček”, traditionally prepared from beef and usually filled with egg, pickle and cold cuts.
Surely you have in your home cookbook a number of favorite and tried-and-true recipes for rolls, but maybe you no longer want to play it safe and would rather try something new and unconventional. Try our recipe, combining ingredients that are not often used together, and you will see that you will soon want to prepare these rolls for your guests at the next festive occasion.
What you will need
For preparing the rolls, prepare:
- ½ kg of quality pork neck
- 1 larger onion
- 300 g mushrooms
- 1 to 2 ripe pears, depending on size
- ½ cup of red wine
- salt, and
- pepper.
Procedure for preparing the rolls
For preparing the rolls it is necessary to have the best possible meat. It must of course be fresh and in the case of neck it should also be as lean as possible. A fattier neck is more suitable for roasting. If you have the option, buy the neck boneless; if not, it needs to be deboned at home before preparing the rolls.
Cut the neck into lengthwise slices and pound them so that you get a surface on which you can put the filling. Salt and pepper the slices and set aside for now.
Now it is time to prepare the filling for the rolls. Chop the onion, mushrooms and pears into small pieces and the cheese into cubes. In a heated pan fry the onion first in good oil or lard until translucent, and then add the mushrooms, which need to be stewed for about 10 minutes. Then remove the pan from the heat and let the mixture cool. Then stir the pieces of pear into the mushroom and onion mixture.
You have the meat and filling ready, now you need to create the rolls. On each slice of meat place a cube of cheese, put a suitable amount of the filling on it with a teaspoon, roll the meat and tie it with string or use, for example, metal skewers, toothpicks or special silicone tools to secure the rolls.
Grease a baking tray with oil and place the rolls on it. Put the tray into an oven preheated to 180 °C and bake the rolls for 10 minutes. After this time, pour the rolls with red wine, put back into the oven and bake for another about 15 minutes.
Serving
You can serve the rolls with just a vegetable salad, but rice, boiled potatoes with parsley or homemade mashed potatoes are also suitable, for example.
Before serving, remove the strings from the rolls. If you used toothpicks and do not want to remove them yourself to avoid damaging the roulades, warn your guests so they do not get an unpleasant surprise while eating.
