- Linden flower syrup
We need:
- 300 g linden flowers
- 500 g sugar
- 3 l water
- 1 lemon
Procedure:
Clean freshly picked flowers of leaves and insects, weigh them and use 200 g of clean flowers.
Place them in a sieve with large holes and wash them under a strong stream of water until they are completely clean. Let them drain well. Pour the water into a pot and bring to a boil. When it begins to boil, add the linden flowers and immerse them in the water.
Cover with a lid and let steep for about 8 hours (preferably from evening to morning). Then strain the solution and return it to the pot together with the sugar and lemon juice. Let everything boil for about 15 – 20 minutes. Pour the resulting syrup while still hot into sterilized glass bottles and turn them upside down. Let cool like this for 10 minutes. Then move the bottles with syrup to the pantry or to a cool dark place.
