The basis of this diet is a well-known soup that is, however, prepared in a different, healthier version. Borscht soup is rich in vegetables, full of vitamins and low in calories. Let’s prepare it together!
Ingredients for borscht soup
2–3 tablespoons vegetable oil
1 onion
1 bunch of celery stalks
1 carrot
1 bell pepper
1 zucchini
1 beetroot
1/2 head of cabbage
2–3 tablespoons tomato paste
3.5 liters boiling water
Salt, spices and herbs to taste
Borscht preparation
Preparing the vegetables: Wash and clean the onion, celery stalks, carrot and beetroot. Cut them into smaller pieces or grate them.
Sautéing: Heat the vegetable oil in a pot and sauté the grated vegetables. When they soften slightly, add the tomato paste and briefly simmer.
Cooking the vegetables: Wash the cabbage, bell pepper and zucchini, chop them and cook them in boiling water.
Combining flavors: Add the cooked vegetables (including the water) to the sautéed mixture. Salt, pepper and season with your favorite herbs. Mix everything and let it simmer for a while so the flavors combine.
Borscht diet plan
The diet plan is divided into 7 days. Each day includes borscht and other permitted foods.
First day
Soup and fruit (except bananas). To drink: tea or coffee without sugar and still water.
Second day
Soup and green vegetables (except beans). For dinner have 1 baked potato drizzled with oil.
Third day
Soup, any fruit and vegetables (except potatoes).
Fourth day
Soup, fruit and vegetables. Plus low-fat milk.
Fifth day
Soup, cooked lean beef and tomatoes.
Sixth day
Soup, cooked lean beef and fresh leafy greens.
Seventh day
Soup, cooked rice with vegetables and fresh fruit juice.
Tips for success
Hydration: Stay hydrated and drink plenty of water.
Exercise: Combine the diet with light exercise or walks.
Healthy habits: Avoid alcohol, sweets and processed foods.
