Cherries are an amazing fruit that you can use especially when baking pies or preparing desserts. They have a slightly tart taste that pairs perfectly with sweet dough. The result is a fresh summer pie you’ll appreciate at any time of day. You can make it from fresh, frozen, or even canned cherries. Of course the best is from fresh ones. After mixing the ingredients, just keep an eye on the baking time and it’s done.

Ingredience

Anyone can manage this cake. Another advantage is the small number of required ingredients:

  • 400 g sugar,
  • 3 eggs,
  • 100 g fat,
  • 400 g flour,
  • 1 package of baking powder,
  • 300 ml milk,
  • 500 g cherries,
  • cinnamon for sprinkling.

Preparing the dough

For a fluffy batter, separate the yolks from the whites and whisk the whites into stiff peaks. Put them in the fridge in the meantime. Mix the yolks with the sugar and fat (for example butter) and beat until frothy. They should take on a pale yellow color and a foamy consistency. Then pour in the milk and beat for a little longer. Mix the flour with the baking powder and stir into the remaining mixture. Finally, gently fold in the beaten egg whites. This way you have created the basic fluffy batter.

Preparing the cherries

It’s up to you whether you want to pit the cherries. If you also plan to serve the pie to children, the pitless option is more suitable.

Baking

Prepare a baking tray 35 x 22 cm in size. Line it with baking paper or grease it well. Pour in the batter and sprinkle the cherries on top and then the cinnamon. Bake in an oven preheated to 180 °C for about 45 minutes – but pay attention to your oven’s behavior, sometimes the cake can be ready earlier.

Old recipe

This is not a novelty, but a recipe tried and tested over the years. It is also suitable for busy housewives because it is very simple. You can also try it with other types of fruit (for example strawberries, raspberries, apricots, blackcurrants or other seasonal fruit). Definitely worth trying.
