Peel the ginger. Cut the lemons and the ginger into smaller pieces. Prepare sealable jars that you rinse thoroughly and let dry. Evenly distribute the lemons and ginger into perfectly dry jars. And finally, portion the honey so that it is evenly distributed everywhere. Shake each jar several times so that the honey gets everywhere and all the ingredients combine. Let them stand for at least 24 hours on the kitchen counter at room temperature and shake again from time to time. Once the mixture releases juice, you can start using it. This is also the time to move the jars to the refrigerator, where they should be stored.
