If you think that the recipe for a classic and time-tested beef broth can no longer be improved, you are mistaken! There is a special beef broth recipe you haven’t tried yet. Whether you want to serve something new for a special occasion or simply crave a change from your usual method, let my recipe inspire you.
Cook an excellent soup full of meat and vegetables
To prepare this great and nutritious soup, which is guaranteed to get you back on your feet when you have a cold or a hangover, you’ll need:
- 1.5 kg of beef, preferably including bones,
- 6 to 7 larger carrots,
- 2 rutabagas,
- 2 bay leaves,
- 1 small celeriac,
- 1 small kohlrabi,
- 1 large onion,
- 1 bunch of fresh parsley,
- 1 teaspoon of freshly grated ginger,
- 1 small cabbage,
- 10 to 12 black peppercorns,
- salt to taste.
Preparation takes only a moment, but the cooking itself requires more time due to the meat
Cut the meat into several smaller pieces, wash it, trim it if necessary, and place it into a sufficiently large pot. Fill it with enough water to fully submerge all the meat. Put the pot with the meat and water on the stove, add two bay leaves and the black peppercorns to the water, then turn on the stove and bring the water to a boil.
As soon as the water starts to boil, skim off the foam, add the onion and celeriac, reduce the heat to medium-low and let it simmer so the beef has a chance to soften. Check periodically that the soup isn’t bubbling too vigorously or splashing out of the pot. After two hours of cooking, add the remaining chopped vegetables, also add the ginger and salt. Let it cook for at least another hour.
When the meat is perfectly tender, remove it from the soup, take it off the bones, cut it into small pieces and return it to the pot. Then chop the green parsley and add it to the broth. Finally, season with salt and pepper if needed. You can cook noodles or another type of dumpling in the soup. Enjoy your meal!
