Lavender syrup is amazing, the best way to use this miraculous herb.

It is fantastic for flavoring lemonades, desserts and for soothing the stomach.

Benefits of lavender syrup:

  • calms and will help you sleep better – take a teaspoon before bed, or a glass of lavender lemonade,

  • a wonderful flavoring for foods and drinks.

You will need:

  • 1.5 l of water
  • 700 g – 1 kg sugar (granulated or cane sugar)
  • 30 g citric acid
  • 100-130 g lavender flowers, finely chopped
  • 1 lemon (well washed)

Method:

Put the ingredients (except the lemon) into a pot.

Pour 1.5 l of boiling water over them. Stir until the sugar is completely dissolved. Add the sliced lemon.

Cover with cheesecloth, which you secure with a rubber band, and let stand for two days at room temperature, out of direct sunlight. Stir every day.

Then strain and store in glass bottles.

Use it to make lemonades, teas, and in desserts to pour over pancakes!
