Medicinal sugar-free elder syrup
An excellent and very tasty recipe for sugar-free elder syrup. It is not only excellent for flavoring lemonades, cakes and desserts.
For the medicinal elder syrup we need:
- about 35 elderflower heads
- 1.5 l boiled and cooled water
- 900 ml acacia honey
- 6 organic lemons
Procedure:
Pick the elderflowers in places that are not dusty – ideally away from roads and on a sunny day.
Sort the elderflowers by hand, and into a large jar place only the blossoms without green parts.
Pour water over the flowers so that they are submerged, add the lemons cut into slices and cover the jar with cheesecloth or a clean towel. Let steep for at least 24 hours in a dark and cool place.
Then strain the elderflowers and squeeze all the juice from the flowers and lemons and pour into a pot.
Add the lemon juice from the remaining lemons (strain through a sieve), the honey and bring the syrup to a boil over low heat. Boil for 5 minutes and then carefully pour the syrup into warm sterilized jars. Close well and leave wrapped in a blanket / cloth to cool completely.
Store in a pantry in a dark place, and after opening keep it in the refrigerator. You do not have to use elder syrup only in lemonades; it also makes an excellent sweetener for cakes and no-bake desserts.
