Try the strudel recipe from Mrs. Dóra Eszter, which has been shared in her family for generations. Prepare these ingredients

  • All-purpose flour 1.5 kilograms
  • Eggs 4 pieces
  • Butter or lard 2 tablespoons
  • Yeast 7.5 grams
  • Lukewarm water 2 tablespoons
  • Sugar 1 tablespoon
  • Large baking sheet
  • Sour cream 1 liter
  • Eggs 2 pieces

Preparation method

Start with the starter. Make it by crumbling the yeast into a bowl and sprinkling sugar over it. Mix the two ingredients into a paste and add lukewarm water. Be careful, not hot, otherwise the yeast won’t activate. Then sift the flour, add the melted fat, crack in the whole eggs and add the prepared starter. Mix all the ingredients and then knead for at least fifteen minutes. After the kneading time has passed, put the dough into a bowl, brush it with slightly warm fat and leave it to rise in a warm place for at least an hour.

The dough has risen

Once the dough has increased in volume, divide it into four rolls, which you again leave to rise for at least fifteen minutes. After this time, roll the dough into a very thin sheet about four millimeters high. Prepare ground poppy seeds mixed with sugar and generously sprinkle the entire dough with them. We recommend spreading sour cream whisked with an egg and sugar onto the poppy seeds. Roll the dough into a strudel and place it on the baking sheet. You can roll the four risen rolls into one large, thin sheet and then cut the rolled strudel into six small strudels. It will save you time and effort. Place all the strudels on the baking sheet and brush them with sour cream. Put the prepared strudels in the oven to bake at 180 °C for forty minutes.
