I have been making this Vegeta for more than 20 years. I started making it back when kidney problems appeared in our family and it was necessary to limit salt and chemical products. Vegeta is excellent and suitable even for small children. I don’t add any salt at all and no one misses it. If you can’t live without salt, add it to the finished Vegeta.
It’s always healthier than Vegeta with glutamate.
We need:
- 1 kg carrots
- 1 kg parsley root
- 500 g onions
- 400 g celery
- 1 green pepper
- 2 red peppers
- 1-2 leeks
- Dried parsley (a handful)
- Dried celery leaves (a handful)
- Two handfuls of dried lovage – my favorite ingredient
Procedure:
Wash and clean all kinds of vegetables.
Let them dry thoroughly.
Grate the vegetables on a grater or chop them finely and then layer them on a baking sheet lined with baking paper. Always place only a thin layer of vegetables on the sheet so that they dry sufficiently.
Put it into a preheated oven and let it dry at a temperature of 50-70 degrees in a slightly open oven until the vegetables are sufficiently dried. Don’t forget to stir regularly to prevent possible burning or scorching of the vegetables.
Another option is to dry the vegetables on a radiator or in a fruit and vegetable dryer.
If you choose drying on a radiator, it is good to cut the vegetables into small pieces beforehand, cook them and then dry them on the radiator. However, you can also dry raw vegetables.
Add the herb tops (both parsley and celery), lovage to the dried vegetables and grind everything together in a meat grinder, or alternatively blend it in a food processor.
The basic Vegeta recipe does not contain salt, but if you want to add it to the Vegeta, you’ll get the typical salty taste. You can add other types of vegetables to the Vegeta – broccoli, garlic, cauliflower, mushrooms or exotic spices – turmeric, coriander, chili. A good idea is to divide the Vegeta into smaller sealable containers and add a different type of spice, herb or selected vegetable to each.
Homemade Vegeta is suitable for flavoring dishes, or just – on buttered bread or in homemade spreads. You can safely give it to small children as well (for them, however, the salt-free version is the most suitable).
Store the Vegeta in a dry, cool place in a sealed container.
