Cabbage pancakes
Cabbage is a relatively inexpensive type of vegetable that can be used in many different ways. Try making simple pancakes from it. You will need the following ingredients:
- 400 g cabbage,
- 1 onion,
- 200 ml kefir,
- 1 egg,
- 1 clove of garlic,
- 3 to 5 tablespoons plain flour,
- 1/3 teaspoon baking powder,
- salt, pepper, herbs to taste,
- oil for frying.
Grate the cabbage and onion coarsely, add the crushed garlic, chopped herbs, salt and pepper. Mix thoroughly and add the egg, kefir, and the flour mixed with baking powder. If the mixture is too thin, add more flour. Heat oil in a pan and take a little of the mixture to form a small patty in the pan. Then fry it on both sides until golden.
Rustic casserole
This time we offer a meat recipe. You will need:
- 250 g ground pork,
- 150 g rice,
- 1 carrot,
- 1 onion,
- 150 ml water,
- 2 tablespoons sunflower oil,
- 400 g potatoes,
- 50 g hard cheese,
- 1 tablespoon tomato paste,
- 2 tablespoons sour cream,
- marjoram,
- salt and pepper.
Finely chop the onion and mix it with the grated carrot. Fry them together in a pan with oil. Then add the rice and water and cook for 15 minutes. Then remove from heat and let it cool slightly. Next, mix it with the ground meat, season with salt and pepper to taste, and with wet hands shape balls the size of a ping-pong ball. Peel the potatoes and slice them into rounds. Arrange them together with the meatballs in a baking dish and bake at 185 °C for about 30 minutes. Meanwhile, make a sauce from the tomato paste, sour cream, water, salt and marjoram. Pour it into the baking dish and bake for another 10 to 15 minutes. Before serving, sprinkle with cheese, dill or parsley.
Cabbage schnitzels
Another cabbage recipe. For its preparation you will need:
- 1 head of cabbage,
- 3 eggs,
- breadcrumbs,
- oil for frying,
- potatoes or potato salad for serving.
The key is to leave the core. Thanks to it the cabbage leaves will hold together nicely. Halve the cabbage and then cut it into wedges so that these wedges are at most 2 cm wide at their widest point. Then you can remove the excess part of the core — but only as much as needed for the leaves to stay together. Boil the prepared cabbage for about 5 minutes in salted water. Then coat in beaten eggs and breadcrumbs. Next fry the cabbage in hot oil on all sides until golden. Serve with a suitable potato side dish.
Soup with potato dumplings
Soup is essential, and therefore often serves as the main course. For this you will need:
- 1.5 tablespoons lard,
- 1 onion,
- 2 cloves of garlic,
- sweet ground paprika,
- hot ground paprika,
- 1 parsley root,
- 1/3 of a celery root,
- 2 carrots,
- salt.
For the dumplings you will need:
- salt and pepper,
- parsley,
- 1 egg yolk,
- 20 g butter,
- 50 g flour,
- 4 cooked potatoes.
In lard we fry finely chopped onion, crushed garlic, diced parsley root, celery and carrot. Then we add a little paprika — both sweet and hot. Fry briefly, pour in water and cook until tender. Meanwhile prepare the dumplings. Mash or grate the potatoes, add butter, flour and the yolk. Season with salt and pepper to taste, add finely chopped parsley. From this mixture form small dumplings and a short time before the end of cooking drop them into the boiling soup. Simmer for about three minutes and serve.
