Cabbage is a diet super-ingredient. It is not only very cheap but also very healthy and contains minimal calories. It doesn’t matter whether you choose white or red – both types are very healthy and also have almost no calories. Absolutely best for a diet, however, is young cabbage; its season is right now!

Young cabbage is full of B vitamins, zinc, fiber and at the same time a rich source of valuable folic acid.

It has a strong detoxifying effect, supports digestion and the immune system. In addition, cabbage also stimulates the digestion of fat stored in tissues. This miraculous food will therefore also take care of settled fat pads.

Basic fat-burning soup that tastes great!

Cabbage soup with groats

We need: (for a maximum of 4 servings per day)

  • a quarter of a small head of young white cabbage
  • 1 carrot
  • 2 celery stalks
  • 1 smaller kohlrabi
  • 1 larger onion
  • 3 cloves of garlic
  • 2 tablespoons of larger oat grits
  • 1 tablespoon of tomato paste
  • 1 tablespoon of oil
  • 250 ml juice from fermented cabbage
  • 900 ml vegetable stock
  • half a teaspoon of crushed cumin
  • 1 bay leaf

Preparation:

  • Chop the cabbage, onion and celery stalks finely, grate the carrot and kohlrabi on a coarse grater.
  • Slice the garlic.
  • Sauté the onion in the oil until translucent, add the garlic and the remaining vegetables, cumin and bay leaf.
  • Simmer for about 10 minutes, stirring regularly.
  • Add the paste, stir, pour in the stock and the groats.
  • Cook until the groats soften, add the cabbage juice, bring to a boil and remove from heat.

Season with herbs and pepper as needed.

Fresh and fermented

Besides fresh cabbage, fermented cabbage is also very beneficial for weight loss. It is a vitamin bomb that neutralizes fats. If you have trouble digesting cabbage, add cumin and a bay leaf to it; you will digest it much more easily and as a bonus, it will help you digest fats.

3 days for a slimmer waist and slimmer face

Day 1

Breakfast: graham roll, a cup of unsweetened acidophilus milk

Mid-morning: one apple and one carrot

Lunch to evening: from lunch every two hours a portion of cabbage soup, maximum four portions

Day 2

Breakfast: plain yogurt with a tablespoon of chopped almonds, 10 white grapes

Mid-morning: 40 grams of hard cheese, a tomato Lunch to evening: as on the first day

Day 3

Breakfast: a slice of wholegrain bread with a little mustard, two slices of ham, a salad cucumber

Mid-morning: banana

Lunch to dinner: as on the first day

Cabbage salads

If you don’t want to follow a cabbage diet, try one of the excellent cabbage salads instead of dinner or a heavy side dish. Young cabbage never tasted better!

Young cabbage salad – for weight loss and for health

We need:

  • 1 smaller head of white cabbage – young
  • 2 red peppers
  • 1 green pepper
  • half a celery root
  • 2 cloves of garlic
  • salt
  • spices
  • olive oil – good quality
  • vinegar, a drop of honey and ground cumin

Procedure:

  • Wash the cabbage and cut into strips into a deep bowl.
  • Wash the peppers and remove all their seeds. Cut into thin strips. Also chop the celery and crush the garlic.
  • Then mix all the vegetables. Drizzle with vinegar and oil, salt and pepper – you can add a drop of honey. Season to taste.
  • Cover the bowl and let chill for at least 3 hours before serving.

Pickled young cabbage salad

Light, delicious and you don’t need a special brine or ingredients. It’s worth trying, especially if you’re planning a barbecue or have a heavy meat lunch — this salad will help you digest quickly and you won’t feel heavy. I lost a few kilos last year thanks to it; replace regular side dishes with it and the results won’t be long in coming.

We need:

  • 2 larger heads of young cabbage
  • 2-3 larger carrots
  • 1-1.5 tablespoons of mustard seeds
  • 1 head of garlic
  • 1 root of horseradish – about 5-7 cm long
  • a bunch of dill
  • salt
  • optional (bay leaf, pepper, …)

Procedure:

  • Chop the cabbage finely, add grated carrot, finely chopped dill, pepper and salt (you can also add a bay leaf, allspice, pepper).
  • Add chopped horseradish, garlic, mustard seeds and mix with your hands until the vegetables release juice.
  • Then transfer to a 5 l clean canning jar and cover with a cloth or cheesecloth and a rubber band.
  • Leave at room temperature for 24-48 hours.
  • Then store in the refrigerator and serve as a tasty side dish.
  • At our place it lasts a maximum of 4-5 days; when we have a family barbecue, even less. The salad is perfect for weight loss, it literally boosts digestion and helps with heavier meals.

Excellent cabbage salad with an extra tasty dressing

We need:

  • 1 smaller head of young cabbage
  • 1 red onion
  • 2 carrots

Dressing:

  • 300 ml plain yogurt
  • 2 teaspoons honey
  • a pinch of white ground pepper
  • 1 tablespoon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 2 tablespoons red wine vinegar

Procedure:

  • Clean the vegetables. You can grate them or chop finely.
  • Mix all the vegetables in a large salad bowl.
  • In a small bowl, mix all dressing ingredients except the vinegar.
  • Mix the dressing with the vegetables and finally pour in the vinegar.
  • Place in the refrigerator to cool for at least 1 hour.

Salad to cleanse the intestines

4 kilos gone, I didn’t even know how: The fat-burning salad cleanses the intestines, kick-starts the metabolism and can do wonders for your figure!

We need:

  • ¼ head of cabbage
  • 550 g red beet
  • 400 g carrots
  • 1 apple – optional
  • 2 tablespoons lemon juice
  • 2 tablespoons grated horseradish

Procedure:

  • Clean the vegetables and grate everything as finely as possible.
  • You can also add a grated apple.
  • Finally pour over the mixture of lemon juice and horseradish – adjust the dressing to taste.

If you want to lose a little more and especially cleanse the intestines quickly, try this drink as well:

  • In a pot heat ½ cup of water,
  • Add ½ teaspoon Himalayan salt and mix well.
  • Then add 1 teaspoon ginger juice, 2 tablespoons lemon juice and ½ cup apple juice.
  • Stir and drink immediately. Preferably drink this when you are at home — it really has a fast cleansing effect.

Try a spicy salad too

We need:

  • a small head of grated young cabbage
  • 1 grated carrot
  • celery
  • hot peppers
  • chopped arugula
  • capers
  • olive oil
  • wine vinegar
  • salt
  • spices

Procedure:

  • Mix everything and generously drizzle with oil and vinegar.
  • Mix thoroughly and season to taste.
  • Let it chill well. Ideally let the salad rest overnight.

Fridge salad for good digestion

We need:

  • 1 larger head of new cabbage
  • 3 larger onions
  • 3 carrots
  • 2 tablespoons of salt

Brine:

  • 1.8 l water
  • 100 ml vinegar
  • 3-4 tablespoons honey
  • ½ teaspoon pepper
  • 1 and ½ teaspoons whole cumin

Procedure:

  • Slice the carrot thinly and sprinkle with salt. Mix and let stand until the cabbage releases juice.
  • Meanwhile prepare the brine.
  • Mix the water with vinegar and honey and bring to a boil.
  • Then add cumin, pepper, let boil and then remove from the heat.
  • Clean and coarsely grate the carrot, slice the onion.
  • When the cabbage releases juice, squeeze it out (you don’t have to leave the cabbage in salt long; we want it to remain crunchy)
  • Mix the cabbage with the carrot and onion.
  • Layer the salad into clean canning jars, seal, and store in the refrigerator for 3 weeks to 1 month.

Soup from young cabbage

We need:

  • 550 g young white cabbage
  • 60 g onion (one medium)
  • 130 g carrot
  • 150 g green pepper
  • 40 g celery stalk
  • 230 g potatoes
  • olive oil
  • water or vegetable stock
  • salt to taste
  • whole black pepper
  • ground cumin

Procedure:

  • Chop the cabbage and onion finely.
  • Also chop the carrot and celery finely, dice the potatoes in the usual way.
  • Heat a little oil in a pot and sauté the onion, carrot and celery.
  • Sauté, stirring constantly, for about 2 minutes.
  • Add the pepper and sauté for another 2 minutes.
  • Then add the potatoes and cabbage. Mix and pour in the stock.
  • Salt, add spices to taste and cook until tender, about 20 minutes.

Cabbage salad for weight loss and against bloating

We need:

  • 500 g head cabbage, grated or chopped finely
  • leek – the white part sliced into rings (can be replaced with onion or spring onion if you don’t have leek)
  • 4 tablespoons apple cider vinegar
  • 1-2 teaspoons honey
  • 1 teaspoon sea salt
  • cumin
  • ¼ teaspoon freshly ground pepper
  • optional – a pinch of ginger

Procedure:

  • Mix the cabbage with the leek.
  • In a container mix the vinegar, honey, pepper and salt (and a grated piece of ginger if you use it).
  • Pour the mixture over the salad and mix.
  • It tastes best if you chill it in the refrigerator for a while, but you can also serve it immediately.
  • You can of course adjust the salad to your own taste – for example more honey or vinegar.

Light salad like from KFC

We need:

  • 1/2 head of white cabbage
  • 1 carrot
  • 1 small onion
  • 200 g plain yogurt
  • 40 ml wine vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • a pinch of black ground pepper

Procedure:

  • Chop the cabbage and onion finely, clean and grate the carrot.
  • Mix the mayonnaise (yogurt) with sugar, salt, pepper, lemon juice and vinegar.
  • Then simply mix the dressing with the vegetables and let stand for an hour or two in the refrigerator.

Cabbage salad with beet for weight loss and a dose of vitamins

We need:

  • 100 g head cabbage
  • 1 medium-sized red beet (cooked)
  • 1 carrot
  • 1 apple
  • lemon juice
  • herbs and spices to taste
  • to make the salad more filling, you can serve it with a boiled egg.

Procedure:

  • Cut the vegetables and apple into thin strips, or use a grater.
  • Mix in a bowl and drizzle with lemon juice.
  • Let the salad rest in the refrigerator for a while before serving.
  • If you prepare the salad for dinner, you can serve it with a boiled egg cut into pieces.
