To prepare this delicious dessert, you will need:
- Salt — a pinch
- Baking powder — 2 teaspoons
- Raisins — 1 handful
- Oil — 100 ml
- Eggs — 2
- Kefir — 1 glass
- Sugar — 1 glass
- Semi-coarse flour — 2 glasses
The preparation will be very simple. We chose semi-coarse flour so that the dough would be airier and more tender. Preparing this dough will take you only ten minutes, so let’s get started. You can pour in all the liquid ingredients and mix thoroughly. Or you can separate the yolks from the whites and whip the yolks with granulated sugar – whisk until the yolks pale. Whip the egg whites to stiff peaks. Next, mix all the dry ingredients – salt, flour, baking powder – and stir. Add the raisins and mix again. If you don’t like raisins, add nuts or seeds. Be careful with chia seeds, which absorb liquid and can make the finished dessert dry. Now combine the liquid ingredients with the dry ingredients. If you whipped the yolks separately, mix the yolks with the flour mixture, stir, and then pour in the whites. Do not beat or vigorously mix the whites. Only gently fold them with the flour and yolks so they remain visible but at the same time blend into the batter. Pour the batter into a prepared pan and bake at 180°C for approximately one hour.
