What you will need:
- 500 grams of linden flowers
- 2.5 to 3 kilograms of sugar
- 4 liters of water (in a glass bottle)
- juice of 7 lemons or 4 teaspoons of citric acid
- cloth or sterile gauze
How to do it?
1. Collecting linden flowers is best on a sunny day when the flowers are already in bloom. After you bring them home, spread them out on newspaper or a baking sheet so any bugs crawl out of them.
2. Later inspect the flower clusters and choose only the most beautiful ones, which you will place into the prepared four-liter container.
3. Immediately pour water over the flowers and let them steep until the next day. Then put the flowers into a clean cloth or sterile gauze and squeeze out their juice. Pour this into a pot and add the other ingredients (sugar and lemon juice / citric acid).
4. Mix the syrup mixture well and heat at a temperature of 85 to 90 ° C until the sugar dissolves.
5. The color of the syrup should be pale yellow. Before pouring, prepare clean bottles into which you pour the boiling syrup and immediately seal the bottles. To prevent the bottles from cracking, wrap them in a damp towel.
6. Finally, turn the bottles upside down for a while. The finished syrup will keep for several years!
