- 1/2 pig’s head
- 2 trotters
- pork knuckles (approx. 1 kg)
- 1 onion
- 3–4 carrots
- 2 cloves of garlic
- whole peppercorns
- salt
- ground sweet paprika
Instructions:
- Clean all the ingredients and place them in a pot with water (twice the amount of water compared to the meat).
- Add the onion, garlic, pepper and salt. Let the mixture simmer until the meat starts to separate from the bones.
- Remove the meat, debone it, and strain the broth.
- Bring the broth to a boil again, add the ground paprika and mix well.
- Arrange the prepared meat on plates and pour the hot broth over it so that it is completely covered.
- Let the aspic cool in a cold place (e.g., balcony, pantry).
- Serve with fresh bread and onion.
Remove excess fat
If you want to lighten the aspic, you can easily remove excess fat. Fat usually settles on the surface and can be simply skimmed off. Another way to reduce the fat content is trimming the fatty parts of the meat before cooking.
