Strawberry season is in full swing, but if you already have enough strawberry dumplings or strawberry sorbet, it’s high time to prepare candied strawberries for the children, which will replace classic and unhealthy candies. Kids will love homemade candied fruit and will beg for more, especially when they share it with friends. Preparing this strawberry treat is also very easy and any housewife can manage it. And you’ll see that even floods of strawberries from the garden won’t be enough for preparation, because they will disappear from the table immediately!

Ingredients

What will you need to prepare tasty candied strawberries? Prepare:

  • strawberries – 1 kg
  • sugar – 800-900 g
  • water – 200 ml
  • citric acid – a pinch

Preparation

Pour water into a larger pot, add the sugar and citric acid and bring to a boil.

Meanwhile prepare the strawberries by removing the stems and rinsing them thoroughly under running water; do not leave them to soak in water, they would unnecessarily absorb it. Pour the strawberries into the pot with the syrup and bring to a boil, let boil for 2 minutes and then wait until the sugar syrup cools.

Drain the cold syrup, return it to the pot and bring to a boil again, cook for several minutes. Then add the strawberries again and bring to a boil again. Let boil for 2 minutes and then let cool completely again.

Repeat the process a third time, drain the syrup and put it to boil; now let it boil for a long time so that a completely creamy liquid forms. How to tell if the syrup is cooked enough? Pour a spoonful of syrup onto a saucer, wait 5 minutes and then make a line across the middle with a knife; if the liquid does not come back together, the syrup is cooked.

Return the strawberries to the prepared syrup, bring to a boil and let simmer for 1-2 minutes. Let cool.

Remove the cold strawberries from the syrup onto a plate or tray and let them dry on a windowsill for 4 days. Turn the strawberries regularly. After drying the strawberries will be flatter, but they will smell wonderful and taste great.

Use the remaining syrup as strawberry juice, just dilute with water. If you use soda water you’ll get a tasty lemonade; just add ice and a few drops of lemon.
