Potatoes are among the extraordinarily versatile ingredients that almost everyone likes and can be prepared in many different ways. You surely know potato fries, gnocchi, potato pancakes or various baked versions, but have you heard of potato schnitzels?
What will you need?
If you have some leftover cooked potatoes that you don’t know how to use up, this is a great recipe. And we bet you won’t make it just once. The whole family will love it, and you can also experiment in the kitchen with different variations or side dishes.
To make the potato schnitzels, prepare
- 1 kg cooked and peeled potatoes
- 100 g plain flour
- 250 g breadcrumbs
- 3 eggs
- Salt, pepper and oil for frying
How to proceed?
Wash and peel the potatoes and cut them into slices about 0.5–1 cm thick, rinse them or soak them briefly in cold water and then dry them thoroughly and season with salt and pepper. This way you have the „schnitzels“ ready, which only need to be coated in flour, eggs and breadcrumbs. In short, just like when preparing classic schnitzels. If you want, you can coat them together with a slice of cheese or ham, but they taste great completely on their own.
Place the breaded potatoes gradually into a sufficiently deep layer of well-heated oil and fry them similarly to schnitzels. However, it is not necessary to fry them for the same amount of time, because the potatoes are already soft and it is only about browning the breadcrumb coating. Place the finished potato schnitzels on paper towels so that the excess fat is absorbed.
What to serve with it?
You can prepare a simple vegetable salad to go with the schnitzels or perhaps a great dip or sauce to dip the cutlets into. A very good choice is, for example, a dip made from sour cream, garlic and fresh herbs. Just mix all the ingredients together and you have a ready sauce that makes the cutlets taste even better.
