This is not the so-called šup, šup white sheet cake, but a delicious dessert ideal for breakfast, as well as for a feast or for sitting with the family. Whoever likes blueberries will find this recipe a top pick among your favorite treats.
Ingredients for preparation
- Butter 200 grams
- Oil 5 tablespoons
- Granulated sugar 150 grams
- Vanilla sugar 1 sachet
- All-purpose flour 300 grams
- Potato starch 100 grams
- Baking powder 1 packet
- Lemon zest 1 piece
- Eggs 6 pieces
Ingredients for the filling
- Blueberries 600 grams
- White chocolate 1 bar
- Sour cream 250 grams
- Milk 100 milliliters
For decoration
- White chocolate 2 bars
- Powdered sugar 150 grams
- Coconut oil 10 milliliters
- Blueberry juice 2 tablespoons
Preparation method
Prepare the eggs, oil, sugar and vanilla sugar. Put all the ingredients into a bowl and whisk with a hand mixer until thick and pale foam. Once beaten, add the flour, potato starch (you can also use cornstarch) and baking powder. Sift the flour. Stir so that the batter is lump-free and then grate the zest from one lemon. Mix again.
Step two
Prepare the blueberries, white chocolate and sour cream. Mash the blueberries in a bowl and pour off the juice. You can pour it into a glass and use it in place of juice. Then melt the white chocolate and slowly mix in the sour cream. When you have a liquid mixture, add the mashed blueberries.
Step three
Prepare a baking tray with a high edge, grease it and sprinkle with breadcrumbs or coarse flour. Spread ¾ of the batter on the tray and pour over the sour cream, blueberries and chocolate. Mix the remaining batter with milk and pour it over the blueberry mixture. Bake in a preheated oven at 10 degrees for thirty minutes.
Step four — glaze
Break the chocolate bar into pieces, melt it and add the sugar. Stir until a smooth mixture forms. Then pour in the blueberry juice or juice. Be careful, the mixture must not be too runny. Spread the resulting glaze over the cooled cake and prepare the second chocolate bar. Melt it with the coconut oil and mix until smooth. Using a spoon, place chocolate on top of the cake to create spots.
