A tiring day at work, studying with the children, household cleaning and on top of that you still have to prepare dinner for the whole family? Try something that basically makes itself and is quick, yet everyone will enjoy it. A dinner prepared this way will allow you to run off to check the children in the little room or relax for a while with your favorite TV series. It’s a wonderful way to kill two birds with one stone: eat well and not overexert yourself.
Ingredients
Everything you will need is most likely already at home. Here are the necessary ingredients:
- 7 pcs medium-sized potatoes,
- 800 g pork – neck is ideal, but leg or shoulder will also do,
- 1 onion,
- 2 tablespoons vinegar,
- 1 teaspoon sugar,
- ½ teaspoon salt,
- 1 tablespoon mustard,
- 2 tablespoons mayonnaise or sour cream,
- salt, pepper, oregano – all to taste.
Prepare the meat
Shortly before cooking you can marinate the meat. Marinated this way it will keep until the next day, so if you have some time the day before you can lighten your load by marinating the meat in advance. If you marinate the meat only a short while before cooking, that’s fine. Mix the mustard and mayonnaise or sour cream. Cut the meat into slices, salt and pepper. Spread the mustard mixture over it and put it in the fridge to rest for a while.
Prepare the vegetables
Now prepare the onion: peel it, remove the root and slice into half-rings. Place them in a deep plate, add the vinegar, sugar and salt and pour hot water over them so they are submerged. Stir well and let rest like this for 15 minutes. Meanwhile peel the potatoes, wash them and slice into rounds.
Baking
Put the meat in a single layer on the bottom of the baking dish, spread the onion and then the potatoes on top. Brush them with oil, salt, add oregano and you can bake. The ideal baking time is 1 hour at 200 °C. If it seems that the potatoes are burning, cover the baking dish from above with foil.
