Have you tried to bake a cake sponge base but found a bad recipe or did something go wrong during preparation? Or are you a beginner and want to bake a cake for someone? Either way, with this simple recipe for a delicious, moist and at the same time fluffy sponge cake base, you will certainly manage easily. No prior cake-baking experience is necessary.
Ingredients needed for the sponge cake base
- Eggs 5 pieces
- All-purpose flour 150 grams
- Sugar 150 grams
- Salt a pinch
First, separate the yolks from the whites and add a pinch of salt to the whites. Using a hand mixer, beat the whites into a stiff foam. Be careful not to overbeat the whites. Once you tilt the bowl and the whites do not fall out, you’re done. Now take the yolks and beat them with the sugar. The yolks should lighten in color and also become thick, yet still liquid. Beat with a hand whisk for about five minutes. Set aside and prepare the flour by sifting it twice. Once that’s ready, add the yolks to the flour and mix well, then add the whites, which you should fold in only by turning, rather less than more. Prepare a cake pan with a diameter of 21 centimeters, and either grease it or neatly line it with baking paper. The oven should be preheated to 160 °C. Bake for 40-50 minutes. Remember that you must not open the oven during the first 40 minutes, otherwise the batter will collapse and you’ll end up with a dense flat cake. Check only visually and then with a skewer. When you insert a skewer into the batter and pull it out, no wet batter should remain stuck to the stick.
Final tip
Once the sponge has cooled properly, wrap it in cling film and let it rest for at least eight hours or until the next day. This way the sponge won’t fall apart and will be easier to slice. After the elapsed time or the next day, cut the sponge into two or three layers and spread creams between them according to your taste. We recommend a vanilla-curd cream. Spread it between the layers and put the top layer on. Now you can also coat the outside with cream and decorate, for example, with fruit: strawberries, blueberries, raspberries.
