How to please the taste buds in the summer months? Definitely with a chilled quark cake with mandarins and a banana pudding topping. The flavor of the fruit pairs beautifully with the quark and ladyfingers, and a strong black coffee gives it the proper kick. The summer refresher also works well as an afternoon snack for children who will beg for seconds. For them, however, choose a decaffeinated coffee variant when preparing the cake.

Ingredients

What will you need to prepare the chilled mandarin cake with quark and banana topping besides a deep baking tray? Prepare:

  • ladyfingers or confectioner's ladyfingers – 3 packs
  • full-fat quark – 500 g
  • vanilla sugar – 2 packets
  • mandarins – 1 can
  • sour cream (min. 12 %) – 2 tubs
  • whipping cream (33 %) – 1 tub
  • banana pudding mix – 1 packet
  • water – 200 ml
  • freshly brewed strong coffee – 1 cup
  • icing sugar – to taste

Preparation

Prepare a deep baking tray and arrange the ladyfingers on the bottom, then drizzle them with the prepared strong coffee.

Place the quark, sour cream and vanilla sugar into a large bowl and beat until fluffy. Whip the cream separately in a glass or metal bowl and then gradually fold it into the quark mixture. Sweeten with icing sugar.

Now begin layering: spread the bottom layer of ladyfingers with the quark cream. Then top the quark layer with mandarins. Now create another row of ladyfingers and drizzle with coffee, as in the first layer. Cover again with the quark mixture and decorate with mandarins.

Finally, prepare the glaze from the remaining mandarin juice, water and pudding powder, adding sugar. Bring the mixture to a boil in a saucepan and, after it thickens, pour it over the entire surface of the cake. Let it set in the refrigerator and serve chilled.

The banana pudding can be substituted with vanilla; for those who do not like puddings, gelatin or another favorite cake topping may be used — simply prepare it according to the manufacturer's instructions and spread it over the top of the cake.
